Perfect on their own- amazing in a dish. These candied pecans are simply splendid and easy to make!
To start, pour 1/4 cup of water into a small skillet. Turn the temperature up to medium/high and allow the water to warm up. Once little bubbles begin appearing at the bottom of the skillet, add the brown sugar, vanilla, orange zest, juice from half an orange, cayenne pepper, and ginger. Stir the mixture and keep it moving. Sugar can burn in the blink of an eye- so watch and keep stirring. You want the mixture to bubble and boil.
Add the pecans.
Reduce the temperature to medium and use your spoon to toss the pecans around in the skillet until they are fully coated. Add a few more sprinkles of brown sugar and toss until the sugar caramelizes (roughly 1 minute). Remove from the skillet and lay flat on parchment paper or a cutting board (make sure to spray with a nonstick before placing the pecans to cool).
Let cool and enjoy :)
Candied Pecans keep for approximately 7 days. Seal in an airtight container.
